I love it when my kids ask for homemade anything so when they asked me to make them Oreo Cookies I happily obliged. They were pretty chuffed to take these in for morning tea at school so they clearly won them over. Enjoy. Eb x
- 140g butter chopped
- 170g caster sugar
- 1 egg
- 1 tsp vanilla bean paste
- 250g plain flour
- 40g cacao powder or cocoa
- 1 tsp baking powder
- Pinch salt
Preheat the oven to 160 deg and line a baking tray with baking paper
Add butter and sugar to the bowl and cream on Speed 5 for 15 seconds. Scrape down the sides.
Add egg and vanilla and mix on Speed 4 for 10 seconds.
Add remaining ingredients and Set dial to Closed Lid and Interval (Wheat) to knead for 1 minute.
Wrap in glad wrap and place in fridge for around 1 hour. Then roll between two sheets of baking paper and use cookie cutters to cut.
Bake in the oven for approximately 10-15 minutes then allow to cool completely before putting vanilla buttercream in the middle to sandwich your cookies together.
