Perfect quick and easy summer recipe with minimal cooking required so as not to heat up the kitchen. As always when its put in a wrap the kids just love it. Eb x
- 15g fresh ginger
- 1 large clove of garlic
- 1 tsp of lime juice
- 30g fresh coriander leaves and stems
- 1-2 tsp sambal olek (or a fresh chilli)
- 1 tsp fish sauce
- 500g diced chicken breast
Add ginger and garlic to bowl and blitz on Speed 8 for 3 seconds.
Add coriander, lime, fish sauce and chilli and mix on Speed 6 for 4 seconds.
Add chicken and combine on Speed 7 for 5 seconds.
Roll into balls and refrigerate for a few hours. Pan fry and serve with your preferred flat bread with a mix of salad. I used julienned carrots, beetroot and snow peas along with spinach, red onion and mango. Drizzle with more sweet chilli sauce and a yoghurt dressing (couple of heaped spoonfuls of low fat greek yoghurt, tbsp olive oil, squeeze of half a lemon, chopped mint leaves and salt/pepper to taste).
