Lemon and Herb Chicken

After nailing the Peri Peri sauce someone asked if I had a Lemon and Herb marinade like Nandos.  I didn't and I still don't, well I don't think I do.  Its been years since I have had the Nandos Lemon and Herb chicken so can't remember what it tastes like but this one tastes gorgeous.  I made it chilli free just to give the kids a night off but if I was doing it for me I would have added at least half a red chilli.  Another simple "takeaway" meal in our house.  Our favourite way to eat it is in a freshly made bun with salad but it would be equally good in wraps or with salad, rice or veggies.   • 50g lemon juice
  • handful of favourite herbs (parsley, sage, basil, coriander, oregano)
  • 20g TMX stock
  • 20g olive oil
  • pinch salt
  • 1 garlic clove
  • red chilli - optional

Add all ingredients to bowl and blitz on Speed 8 for 50 seconds.  Marinade chicken thighs for 3-5 hours then bake at 180deg for 20 minutes.
