Pumpkin and Sage Pasta

When you are looking for a quick, easy meal and takeaway it looking good, instead go for a healthy option.  You only need a few ingredients to make a beautiful pasta dish that is quicker than getting in the car to pick up a meal (and loads cheaper too).  Pour this sauce over your favourite pasta, tortellini or even ravioli. Print this recipe 

  • Packet of any pasta cooked as per instructions
  • 3 cloves Garlic
  • 20g Olive oil
  • Grated Parmesan cheese (I buy blocks, grate and keep in freezer)
  • 400g of peeled, chopped pumpkin
  • Fresh sage
  • 100g milk
  • 30g Butter

Add pumpkin and chop on Speed 7 for 5 seconds or until grated.  SET ASIDE.

Without cleaning the bowl, add garlic and chop Speed 5 for 5 seconds.

Add oil and sliced sage leaves and heat for 1 minute at 100deg Speed 3 Speed 1.

Add pumpkin and cook for 10 minutes at 100deg Reverse Speed 1.

Add milk and cook for 8 minutes at 100deg Speed 1.

Add some cheese and the butter blitz on Speed 8 for 5 seconds.

Pour over cooked pasta and top with extra parmesan.
