A quick and easy quiche makes for a beautiful lunch or dinner. Bek x

- 1 sheet puff pastry
- ½ red onion
- 2 cups pre-packed spinach leaves
- 4 eggs
- 200g cream
- 200g fetta crumbled
- 300g cheese cubed
- Salt and pepper
Using spray oil, spray a quiche dish and lay puff pastry into dish trimming to fit, prick with a fork and par bake in 180 degree oven until lightly brown (it will puff up a bit so when you take it out, push puffy bits down with a spoon). While it’s in the oven move on to next steps.
Put cheese in TMX and grate 10 seconds Speed 8 . SET ASIDE.
Add spinach to bowl and chop 4 seconds Speed 6. SET ASIDE
Add onion to bowl and chop 4 seconds Speed 6 then sauté 100 degrees 3 minutes Speed 2.
Add cream, eggs, 2/3 of the grated cheese salt and pepper (in that order so as to not cook the eggs in the hot onions) and mix Speed 5 for 5 seconds.
Spread chopped spinach and feta evenly over the pastry base.
Pour in egg mix and bake at 180 degrees for approximately 20 minutes. Add remainder of cheese to top and continue to bake for a further 15 minutes until brown and set.
