Now these I liked!! Deliciously moist and tasty. Conveniently uses up my egg whites after making icecream or hollandaise too so it will be a regular around here. Eb x
- 200g icing sugar - sifted
- 100g self raising flour - sifted
- 80g shredded coconut
- 4 egg whites
- 70g butter
- 70g coconut oil
- 100g dark choc chips
Preheat oven to 160 deg.
Add sifted flour, icing sugar and coconut to bowl and mix on Speed 5 for 5 seconds. SET ASIDE.
Add egg whites, butter and coconut oil to bowl and mix on Speed 5 for 20 seconds.
Add flour and mix on Speed 5 for 10 seconds.
Add chocolate and mix at Reverse Speed 1-2 for 5 seconds.
Spoon into patty pans, top with some extra choc chips and bake for 15-20 minutes.
