That's right it is possible!!! I was throwing out a number of sauces because they kept on splitting for no real reason, it was hit and miss. WHY???? Well I still don't know what makes it split but the good news is that it can be fixed quickly and of course easily.
So here is tonight's poor ole hollandaise that was going along beautifully then suddenly its splitsville - EEEEK!
So here's what you need to do.
- Remove the butterfly and scrape all the sauce into a jug.
- Boil some water and add 25g to the bowl.
- Turn blades onto Speed 4 and slowly add the split mix back into the bowl. I took about 2 minutes. You can also set the temp to 90deg to keep your sauce warm.
The end result is a beautifully smooth and creamy sauce. I am so thrilled this technique worked. I hope you never have split hollandaise but if you do you now have the means to fix it.
