- 60g brown sugar
- 1 tsp ground cinnamon
- 120g caster sugar
- 90g butter
- 2 eggs
- 1 tsp vanilla
- 220g plain flour
- 2 tsp baking powder
- 110g milk
- 1 large granny smith peeled, cored
Prepare a small loaf tin and preheat oven to 160deg.
Add brown sugar and cinnamon to bowl and mix on Speed 5 for 5 seconds. SET ASIDE.
Add flour and baking powder to bowl and mix on Speed 5 for 5 seconds. SET ASIDE (in separate bowl to sugar).
Add apple to bowl and chop on Speed 5 for 3 seconds. SET ASIDE.
Add butter and caster sugar to bowl and cream on Speed 5 for 10 seconds. Add vanilla and with blades running on Speed 5 add eggs one at a time and turn off after 15 seconds.
Add flour then milk and mix on Speed 2 for 20 seconds. Scrape down sides.
Add half the mix to the pan then top with half the apple and half cinnamon mix, gently press down. Add remaining batter then top with remaining apple and cinnamon mix.
Bake for 30 - 40 minutes.
