Chicken Taquito

Something a little different for those who love Mexican food.  Without a sauce on top these are like crunchy enchiladas so the kids loved them.  The spice mix is very mild so next time I would probably beef it up a bit as my kids can tolerate a descent hit of spice.  Served with sour cream and a bean salsa its delicious.   • 4 Chicken Thighs – trimmed and diced
  • 100g cheddar cheese cubed
  • 100g cream cheese
  • Juice of ½ lime
  • 2 spring onions
  • 70g cherry tomatoes
  • 30g capsicum
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ¼ tsp chilli
  • ½ tsp onion powder
  • 1 garlic clove
  • Handful parsley
  • Pinch salt
  • Tortillas

Add 800g water to bowl, place chicken in basket and put in Thermomix.  Cook for 18 minutes at Varoma Speed 2 (stirring chicken half way through).  Set aside to cool.

Add garlic, parsley and spring onion to bowl and chop on Speed 7 for 3 seconds.  Add tomatoes and capsicum and chop on Speed 6 for 2 seconds.  Scrape sides.

Add juice, spices, chicken and cheeses and mix on Speed 6 for 3 seconds.

Place spoonfuls of mix in tortillas and roll up.  Place in a baking tray, sprinkle some more cheese on top and bake for 20 minutes at 180deg.
