Chocolate Fridge Cake

This recipe came across my news feed after another side had "liked" it.  I immediately started drooling so as soon as I got home from work I quickly converted it for Thermomix users.  I love it when a recipe meets your every expectation and this was beautiful.  Incredibly moist and chocolatey without being too rich.  The original recipe (for non Thermie uses) is from I have reduced the sugar and the icing mix.  This is a morning tea winner.  Eb x

  • 100g plain flour
  • 50g cocoa
  • 1 tsp baking powder
  • Pinch of salt
  • 100g butter
  • 100g caster sugar
  • Tsp vanilla paste /essence
  • 3 eggs
  • 140g sour cream

Preheat oven to 160deg and grease and line a slice pan.

Place flour, cocoa, baking powder and salt in bowl and mix on Speed 4 for 10 seconds.  SET ASIDE.

Add butter and sugar to bowl and cream on Speed 5 for 10 seconds.

Add vanilla and with blades running on Speed 4 add eggs one at a time.  Stop mixing at 15 seconds.

Add flour to the bowl and sour cream and mix on Speed 2 for 20 seconds.  Scrape down sides and use your spatula to mix.

Pour into tin and gently tap tin on bench to get rid of air bubbles.  Bake for 20-25 minutes.  Set aside to cool.

  • 100g dark chocolate
  • 100g cream
  • 10g cocoa
  • 40g icing sugar

Add chocolate and cream to bowl and melt for 3 minutes at 50deg on Speed 3.

Add cocoa and sugar and mix on Speed 4 for 15 seconds.  Place bowl in the fridge to cool.

Once cool spread icing over the cake.  Keep in the fridge.
