Carrot Pesto

This recipe is inspired by my friend Tracy.  Tracy and I used to work together before she became a mum so we spent many hours in the lunch room checking out each others cooking.  She is a vegetarian and let me tell you she ate better than anyone.  Her meals always looked amazing whether it was a quinoa salad or this beautiful carrot pesto.  She was kind enough to make it for me once and I loved it.  I'm sure she gave me the recipe but of course I have lost it over the years so here is one that I have put together.  My 11 year old couldn't eat it quick enough!!  Enjoy.   • 360g Carrot (chopped in big pieces)
  • Leaves from 2 rosemary sprigs and some Thyme
  • 90g walnuts
  • 90g Parmesan Cheese
  • 1 garlic clove
  • Salt and Pepper to taste
  • 50g olive oil
  • 500g pasta
  1. Add all ingredients into bowl, set dial to Closed Lid and blitz on Turbo for 1 second.  Repeat until it is pulverized (it took me 4 times)
  2. Cook pasta according to packet, drain in a colander with a mug underneath to capture cooking water.  Working quickly put the pasta back into the pot and add pesto mix. Use a wooden spoon to coat the pasta and add some of the reserved cooking water to create a sauce. 
  3. Serve immediately with parmesan, feta or both.
