Cuppa Cookie

Two of my favourite things, CHOCOLATE and COFFEE.  What happens when you smash them into a cookie?  Yummy goodness.  Whilst this will never replace a great cup of coffee, this is a cookie with a difference.  It doesn't have an overwhelming taste of coffee just a gentle hum.  What's not to love?   • 200g plain flour
  • 3 tsp granulated instant coffee
  • ½ tsp baking powder
  • Pinch of salt
  • 150g butter
  • 100g raw sugar
  • 100g brown sugar
  • 2 eggs
  • 250g rolled oats
  • 180g dark choc chips
  1. Preheat oven to 160 deg and line 2 biscuit trays with baking paper
  2. Add flour, coffee, baking powder and salt in bowl and mix on Speed 5 for 5 seconds.  Set aside.
  3. Add butter to bowl and cream for 10 seconds on Speed 5.
  4. Add sugars and cream for a further 10 seconds on Speed 5.
  5. With blades on Speed 5 add eggs one at a time.
  6. Add flour and oats and mix on Interval for 30 seconds.
  7. Add choc chips and continue to mix on interval for 20 seconds.
  8. Using about a teaspoon of mixture, roll into a ball, place on tray and slightly squish.  Bake for 20 minutes or until golden.
