Chicken Nacho Bake

When I ask my kids what they want for dinner, the answer is quite often nachos.  We used to do them with mince and a jar of Old El Paso sauce but now I have a TMX I can make my own salsa!  There is a fab recipe in the Meat On the Menu cookbook for salsa - Bek x

  • 1 bag Corn Chips.
  • 2  chicken breasts
  • 2 tsp garlic salt
  • 1/2 tsp cayenne pepper
  • 1/4 tsp cumin
  • 2 cups TMX salsa (from Meat on the Menu Cookbook)
  • 1/2 onion
  • 1 cup grated cheese
  1. Mix together spices in a small bowl. 
  2. Place two chicken breasts in top tray of Varoma and sprinkle with spice mix.  Place 1lt of water in bowl and place Varoma on top.  Steam at for 20 minutes at Varoma on Speed 3.  Leave to cool. 
  3. Clean bowl and grate cheese on Speed 7 for 5 seconds.  Set aside. 
  4. Add 1/2 peeled onion and finally dice on Speed 7 for 5 seconds.  
  5. Combine  salsa, cooled shredded or diced chicken and onion in TMX bowl reverse speed 4 for approx. 5 seconds.
  6. In a large baking dish, arrange corn chips over base.  Spoon chicken mixture evenly over the top.  Cover with grated cheese and bake in 180 degree oven for about 15 minutes. 
  7. Serve with sour cream, avocado or guacamole, green onion tops and fresh sliced chilli or jalapenos.
