Satay Marinade/Sauce

This is a delicious sauce which is quite versatile.  I have used this to marinade chicken or use as a side sauce for wraps or satay sticks.  The chilli can be modified to suit your individual taste but in the recipe below my kids ate it no worries.  Thanks to my mum who was on hand to help in the final flavours, I think its a winner.   • 100g roasted peanuts
  • 1/2 red chilli deseeded
  • small handful of coriander
  • 2 garlic cloves
  • 30g soy sauce
  • 15g ginger
  • 15g sesame oil
  • 1 tsp lemongrass puree
  • 20g honey
  • 30g olive oil
  • 50g water

Add all ingredients into bowl and blitz for 1-2 minutes on Speed 9 until desired consistency is reached.  If mixture is too thick add some more water. 

Prepare chicken thighs as required (diced for wraps) and coat in marinade reserving some to have as a side sauce.  Bake chicken in a tray lined with baking paper in a preheated 180deg oven for approximately 25-30 minutes.  While baking prepare tortillas.

Ready to bake in the oven.  Chicken can be fried but by doing it in the oven you reduce the need for extra oil.
