A quick, healthy and tasty afterschool snack, Sunday breakfast or just a yum way to use up those browning bananas in the fruit bowl! My kids love a good pikelet and with a basic batter recipe, you can add anything your heart desires! This batter recipe uses wholemeal flour and sour cream and brown sugar for a touch of difference. Be decadent and serve with either real butter, maple syrup, chocolate sauce or whipped cream. Bek x
- 2 bananas
- 130g wholemeal flour
- 40g brown sugar
- 50g sour cream
- 110g milk
- 1 egg
- Slice 1 banana and set aside.
- Add the second banana and the rest of ingredients to TMX bowl and mix for 5 seconds on Speed 5. Remove lid, scrape down sides and blitz for another 5 seconds.
- Spray a non-stick pan with oil and place slices of banana around edge (about five per large fry pan) then pour 2 tablespoons batter mix over each banana slice. When bubbles form on the top, flip over carefully and cook for a further minute or so. Cook on wire baking tray before serving.
