Bek's Creamy Beef Curry

Who doesn't love a good tender beef curry? This came about one night when I fancied that old school curry flavour, threw some ingredients into the TMX and whamo! A beautiful, tender beef curry! All three of my kids loved this too and you can adjust the heat by the number of chillies you add to suit any taste. Bek x

  • 1kg Cubed gravy beef 
  • 45g butter
  • 2 brown onions halved
  • 1cm ginger
  • 2 cloves garlic
  • 3 tbsp. curry powder
  • 1 tbsp. tumeric
  • 2 tsp mustard seeds
  • 1 tbsp. white vinegar
  • 2 tbsp. TMX stock
  • 1-2 large red chillies seeds removed
  • 400g tin tomatoes
  • 2 tbsp. white sugar
  • 1.5 MC cream
  • juice of half a lemon or one whole lime
  1. Put garlic cloves, ginger and chillies into TMX and chop for 5 seconds on Speed 7
  2. Add onions and chop for 6 seconds on Speed 7
  3. Scrape down sides of bowl, add butter and sauté for 3 mins at 100 deg on Speed 1
  4. Add curry powder, turmeric and mustard seeds and sauté for 2 mins at 100 deg Speed 1
  5. Add sugar, vinegar, and mix for 5 seconds on Speed 3
  6. Add cubed beef, tinned tomatoes, TMX stock and cook for 60 minutes at 100 deg on Reverse Soft Spoon.  Approximately half way through cooking add cream through hole in the lid
  7. When cooking is complete, check for seasoning and add salt and white pepper if needed and pour into thermo server to keep hot while you use TMX to make rice or mashed potatoes and steamed green peas

Just before serving up squeeze juice of half a lemon or one whole lime and stir through... Garnish with parsley or coriander
