Vanilla Swiss Roll

I have never made a Swiss Roll before, it definitely would have been in the "too hard basket".  So this is my first ever attempt and I was surprised at just how easy and delicious it was. Eb x

Print this recipe 

  • 3 eggs separated
  • 95g caster sugar
  • ¾ cup SR Flour
  • 1tsp vanilla paste
  1. Preheat oven to 220 deg and line a sponge tin with baking paper and butter.
  2. Insert butterfly and beat egg whites on Speed 4 until soft peaks form (approx. 1 ½ mins) 
  3. With butterfly still in place and blades on Speed 4, slowly add sugar until it looks glossy and thick (approx. 3-4 minutes)
  4. Turn blades to Speed 2 and add yolks one at a time along with vanilla.
  5. Gradually add flour and mix on speed 1-2 until just mixed.
  6. Pour into tin and bake for approximately 8 minutes.
  7. While sponge is cooking, lay a sheet of baking paper on a board and sprinkle with caster sugar.  Once sponge has cooked, remove from oven and turn onto the baking paper/caster sugar and roll up (including the paper) and set aside to cool. 
  8. Once cool unroll and spread jam and cream then re roll.  Sprinkle with more icing sugar if required.
