Christmas Leftover Quiche

This recipe was submitted to us by Toni-Anne Green.  My daughter and I love quiche but my other daughter and husband don't. Not sure if this is a bad thing or a good thing.  Bad as I don't make it too often but great because when I do Skye and I get to devour the lot.  This recipe was a stunner and Skye loved it.  I used low fat cream and feta (just because the Xmas calories need to be slowed) but even taking the "healthier" option it was decadent!  Toni-Anne used smoked salmon but I used turkey, I think anything would work.  Thanks so much for sharing this recipe Toni-Anne.  Eb x

  • 1 qty of EDC shortcrust pastry
  • 200g cream
  • Block of Feta Cheese (approx. 200g)
  • 4 large free range eggs
  • 1 onion
  • oil
  • Christmas meat leftover – diced (smoked salmon, turkey, chicken or ham)
  • Grated cheddar

Make your shortcrust pastry as per EDC. Roll it out and place in a quiche tin.

Preheat oven to 180deg. Add onion to the bowl and chop for 5 seconds on Speed 5.  Add a little bit of oil and sauté for 3 minutes on Varoma Speed 2.

Add cream and eggs and mix on Speed 4 for 5 seconds. Add feta and meat (or anything else that takes your fancy – I added basil) and mix on Speed 4 for 5 seconds.

Pour into quiche tart and top with a small amount of cheddar. Bake for 30 minutes or until golden and set in the middle.
