Sundried Tomato, Cheese and Onion Muffins

These muffins make a nice change from the tired old sandwich in the kids lunch box.  Very moist and full of flavour. Bek x

  • 250g cheese
  • 50g Sundried tomatoes in oil
  • 1 small onion peeled and halved
  • 2tbs sour cream
  • Hand full flat leaved parsley
  • ¾ cup milk
  • ¼ cup vegetable oil
  • 1tsp TMX vegie stock concentrate
  • 150g Self Raising flour
  • 150g w/meal S/R flour
  • 2tsp baking powder

Preheat oven to 180deg.

Add cheese to TMX bowl and grate Speed 7 for 6 seconds

Remove half and set aside.

Add remainder of ingredients including a tablespoon of the oil from the sundried tomatoes

Blitz for 6 seconds on Speed 7. Mixture is quite thick, but if it doesn’t look fully incorporated, blitz again for another few seconds.

Put a tablespoon or so into patty pans and sprinkle on remainder of grated cheese.

Bake for approximately 20 minutes or until browned on the top and they springs back when touched.
